Here is one recipe that I have - and its really good.
1 lb ground chuck beef
1 tbs minced onion
1 tbs garam masala
1 tbs ground red chilli
1 tbs salt
1 tbs pepper
1 tbs oil
2 tbs liquid smoke
2 tbs worcestershire sauce
Mix in all ingredients so that a paste is formed. Form 4 patties from the paste and leave aside while the grill is getting ready.
Use about 25-30 charcoal pieces and make sure that they are hot (orange embers should be seen in the charcoal). Once this is done, lay an aluminium wrap on top of the grill and arrange the 4 patties about 5-6 inches from each other.
Flip every 10 min and use a BBQ spatula (metal with wood handle) to squeeze all fat/oil out of the patties. Cook for 30 mins or till well done.
To serve :
Lay patty on bun and cover with a slice of cheddar cheese (Kraft or any other generic brand will be OK). Serve with slice of onion, tomato, lettuce and either mustard( I prefer mustard) or mayo.

I like my burgers to be a bit moist.
1 lb of ground meat ( beef, turkey)
1 onion
1 egg
1 Kaiser roll or any other bread roll
1 cup of milk
oregano
salt & pepper
bread crumbs
place the meat in a bowl.
peel and dice onion in to small pieces. Sauté it on the stove till golden. Add it to the meat. In the meantime place the bread roll in a small bowl and pour the milk on top of it - let the milk sink in the roll. After the whole milk disappears, place it in the meat bowl. Add the egg, oregano and salt & pepper. Mix everything properly. Out of the mixture form burger patties and coat them with bread crumbs. Now you can pan fry it.
You can use different spices, but I like it most with oregano.

The key for me has been to use beef that is not too lean. Seomthing in the 80%-90% range seems to work best.
